Carrot and Zucchini Fettuccine with Peanuts with Yummi Nuts Japanese Peanut

Ingredients

  • 1 large carrot
  • 1 large zucchini
  • 1 tablespoon of salt
  • 1 tablespoon of olive oil
  • 1 clove of garlic cut in half
  • 1 cup ketchup sauce
  • 1 tablespoon of Parmesan cheese
  • 1 bag of Yummi Nuts Japanese Peanuts

Ingredientes

1 large carrot
1 large zucchini
1 tablespoon of salt
1 tablespoon of olive oil
1 clove of garlic cut in half
1 cup ketchup sauce
1 tablespoon of Parmesan cheese
1 bag of Yummi Nuts Japanese Peanuts

Preparation

  • Step 1: Peel the carrot and zucchini. With the same peeler, cut long strips or "noodles" of both vegetables, making sure they are more or less the same size.
  • Step 2: Place the steamer basket in a pot and pour enough water leaving ½ finger between the water and the basket, add the salt.
  • Step 3: Place the carrot and zucchini on top of the basket, put the pot on the burner over medium heat, cover, and cook for 3 minutes.
  • Step 4: Heat the oil in a nonstick skillet and brown the garlic over medium heat, pressing it against the pan to release its juices for 3 minutes. Remove from heat and discard.
  • Step 5: Add the "noodles" and brown for 2 minutes; Add tomato sauce, cheese, and peanuts and serve.
