Cashew Hummus with Yummi Nuts Cashew with Salt

Ingredients

  • 1 ½ cups of cashew seeds soaked and then drained (cover with hot water and let stand for an hour)
  • 3 tablespoons coconut oil
  • 2 tablespoons lemon juice
  • 1 tablespoon of water
  • 1 teaspoon ground cumin
  • 1 teaspoon of paprika
  • 1 tablespoon of chopped parsley
  • 1 head of roasted garlic (cut in half, drizzle with olive oil and bake at 400º F for 35 minutes)
  • Olive oil and paprika to serve

Preparation

  • Step 1: Place all the ingredients in a processor and process until you get a homogeneous mixture
  • Step 2: Place in a serving bowl and drizzle with olive oil and sprinkle with paprika
  • Step 3: Serve with toasted pita bread
