Cashew Hummus with Yummi Nuts Cashew with Salt

Ingredients
- 1 ½ cups of cashew seeds soaked and then drained (cover with hot water and let stand for an hour)
- 3 tablespoons coconut oil
- 2 tablespoons lemon juice
- 1 tablespoon of water
- 1 teaspoon ground cumin
- 1 teaspoon of paprika
- 1 tablespoon of chopped parsley
- 1 head of roasted garlic (cut in half, drizzle with olive oil and bake at 400º F for 35 minutes)
- Olive oil and paprika to serve

Preparation
- Step 1: Place all the ingredients in a processor and process until you get a homogeneous mixture
- Step 2: Place in a serving bowl and drizzle with olive oil and sprinkle with paprika
- Step 3: Serve with toasted pita bread
