Peanut Pie with Yummi Nuts

Ingredients
- 1. Ingredients for the dough:
- 1 stick of cold margarine
- 1 1/4 cup flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 to 3 tablespoons of ice water
- 2. Ingredients for the filling:
- ½ cup salted peanuts
- ¾ cup dark corn syrup
- 1/3 cup brown sugar
- 3 eggs
- 2 tablespoons melted butter
- 2 teaspoons vanilla essence
- ¾ cup crushed Honey Peanuts
- ¼ cup Omega Mix

1 stick of cold margarine

½ cup salted peanuts
¾ cup dark corn syrup
1/3 cup brown sugar
3 eggs
2 tablespoons melted butter
2 teaspoons vanilla essence
¾ cup crushed Honey Peanuts
¼ cup Omega Mix
Preparation
- Step 1: Preheat the oven to 375°F. To prepare the dough, place the margarine, flour, salt and sugar in a food processor.
- Step 2: Process a little at a time until you have a sandy consistency.
- Step 3: Add the water little by little while the processor is running.
- Step 4: When a homogeneous dough is formed, remove from the processor.
- Step 5: Wrap in plastic wrap and refrigerate for 30 minutes.
- Step 6: Meanwhile, prepare the filling by mixing the first 5 ingredients with an electric mixer until well blended.
- Step 7: Add the 3/4 cup of crushed peanuts and stir with a spatula.
- Step 8: On a clean, floured surface, flatten the dough with a rolling pin into a circle.
- Step 9: Place in a greased pie pan and fold over the edge. Pour the filling over the dough and sprinkle the Omega Mix on top.
- Step 10: Bake for 40 to 45 minutes or until the crust is crisp and beginning to brown and the filling is set.
- Step 11: Cool completely to room temperature and then refrigerate for 2 hours before serving.
