Peanut Pie with Yummi Nuts

Ingredients

  • 1. Ingredients for the dough:
  • 1 stick of cold margarine
  • 1 1/4 cup flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 to 3 tablespoons of ice water
  • 2. Ingredients for the filling:
  • ½ cup salted peanuts
  • ¾ cup dark corn syrup
  • 1/3 cup brown sugar
  • 3 eggs
  • 2 tablespoons melted butter
  • 2 teaspoons vanilla essence
  • ¾ cup crushed Honey Peanuts
  • ¼ cup Omega Mix

Ingredientes

1. Ingredients for the dough:
1 stick of cold margarine
1 1/4 cup flour
1 teaspoon salt
1 teaspoon sugar
2 to 3 tablespoons of ice water
2. Ingredients for the filling:
½ cup salted peanuts
¾ cup dark corn syrup
1/3 cup brown sugar
3 eggs
2 tablespoons melted butter
2 teaspoons vanilla essence
¾ cup crushed Honey Peanuts
¼ cup Omega Mix

Preparation

  • Step 1: Preheat the oven to 375°F. To prepare the dough, place the margarine, flour, salt and sugar in a food processor.
  • Step 2: Process a little at a time until you have a sandy consistency.
  • Step 3: Add the water little by little while the processor is running.
  • Step 4: When a homogeneous dough is formed, remove from the processor.
  • Step 5: Wrap in plastic wrap and refrigerate for 30 minutes.
  • Step 6: Meanwhile, prepare the filling by mixing the first 5 ingredients with an electric mixer until well blended.
  • Step 7: Add the 3/4 cup of crushed peanuts and stir with a spatula.
  • Step 8: On a clean, floured surface, flatten the dough with a rolling pin into a circle.
  • Step 9: Place in a greased pie pan and fold over the edge. Pour the filling over the dough and sprinkle the Omega Mix on top.
  • Step 10: Bake for 40 to 45 minutes or until the crust is crisp and beginning to brown and the filling is set.
  • Step 11: Cool completely to room temperature and then refrigerate for 2 hours before serving.
