Pork Medallions with Peanut Sauce with Yummi Nuts Chile Toreado y Limón

Ingredients
- Ingredients for medallions:
- 2 pounds ribbon tenderloin cut into medallions
- 1 tablespoon mustard
- 2 tablespoons of soy
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 4 tablespoons sesame oil
- Ingredients for the sauce:
- 1 bag of Yummi nuts Chile Toreado
- 1 bag of Yummi Nuts with Lemon
- 2 tablespoons peanut oil
- 1 clove garlic
- ½ onion very minced
- 4 tablespoons peanut butter
- 1 liter of cream
- 1 tablespoon of red paprika powder (paprika)
- 2 tablespoons of soy
- Salt and pepper to taste

2 tablespoons of soy

Preparation
- Medallions preparation:
- Step 1: Mix all the ingredients except the oil in a bowl and spread the medallions.
- Step 2: Heat the oil, lower the heat and fry the pieces until golden brown on both sides.
- Sauce preparation:
- Step 1: Crush the peanuts in a processor until it is practically powder, leave a little half crushed aside.
- Step 2: In a pot, heat the oil and fry the garlic and onion until the onion is transparent. Add the peanut butter, then the cream, a little salt and pepper, and the paprika. Stir constantly and keep the heat low.
- Step 3: Add the ground peanuts and continue stirring until thickened.
- Step 4: Pour the sauce over the pork medallions and sprinkle the rest of the peanuts on top.
