Roasted cauliflower with Yummi Sauce

Ingredients
- Ingredients for the cauliflower:
- 1 large cauliflower
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Ingredients for cashew sauce:
- ½ cup salted cashews
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 4 tablespoons water
- 1 teaspoon cumin powder
- 1 clove garlic, minced
- Pinch of cayenne pepper
- Ingredients for serving:
- Peanuts with Chile Toreado
- Chopped cilantro

Ingredients for the cauliflower:
1 large cauliflower
2 tablespoons of olive oil
Salt and pepper to taste

½ cup salted cashews
3 tablespoons olive oil
1 tablespoon lemon juice
4 tablespoons water
1 teaspoon cumin powder
1 clove garlic, minced
Pinch of cayenne pepper
Ingredients for serving:
Peanuts with Chile Toreado
Chopped cilantro
Preparation
- Step 1: Preheat the oven to 425º F and line a baking sheet with baking paper.
- Step 2: Cut the cauliflower into 1 ½ " slices.
- Step 3: Brush with olive oil on both sides and season with salt and pepper.
- Step 4: Place the slices on the tray and cover them with aluminum foil. Bake for 5 minutes.
- Step 5: Remove the foil and roast for 10 minutes, turn them over and roast for 7 minutes more.
- Step 6: While the cauliflower slices are baking, soak the cashews in water for 15 minutes.
- Step 7: Drain and place them in a blender.
- Step 8: Add the rest of the ingredients and blend until smooth.
- Step 9: Serve the sauce with the cauliflower steaks and add fresh cilantro on top.
